Phonograph Interviews are usually found placed on shelves, drawers, or you can even find them sitting on chairs and stools.
Phonograph Interviews can be easily missed if you cannot collect one. But the game does give you a chance to play each Act again and separately to collect any Phonograph Interview you may have missed. This can be done by finishing the game, which will then unlock New Game + where you collectibles will be carried over.
It is worth mentioning that any Phonograph Interview you collect will not be saved until you reach a new checkpoint. This means that if your character dies before you can reach the next point, every collectible will be lost and have to be picked up again. Another thing to keep in mind is that your collectibles tracker to unlock the trophy is only updated when you get back to the cabin. This is why you should finish the Act your are playing through.
If you miss a collectible, and use New Game +, you can go to each Act to play it again and collect any Phonograph Interview that you forgot to collect. Make sure that each time you play a different Act, you will have to finish it and then return to your cabin for the trophy to update its tracker.

In this Act, you will enter an area that will look like a farm. Once you pass the arm that is sticking out of the cell, you need to open the cell yourself. Open the door and then close it behind you to open the door to a cell on the right. Inside this cell will be a chest containing the phonograph.

This item can be found on the room with a dead guy sitting on a wheelchair. It will be in one of the drawers of the writing desk.
