Jerky is obtained when you capture a monster alive, allowing you to prepare them into Jerky. This means that you need to capture a monster alive and not beat them completely. You can increase your chances of getting a monster alive if you go looking for them in low-level areas when you are at a mid-high level with Ochette.
Areas that don’t require a high level ensure that monsters in this region are weaker and more vulnerable to your attacks, allowing you to turn them into Jerky when they are at low HP.
Another way you can make sure that you capture Monsters alive is by using the Mercy Strike Job skill that launches a bow attack on a single target. The best part about this skill is that a lethal attack with the bow will leave the monster with just 1 HP left. This means that the monster will be in the perfect state to be captured and turned into Jerky.
